Ingredients
- 4
courgette, quartered lengthwise
- 1 tbsp.
extra-virgin olive oil
- 2
cloves garlic, thinly sliced
- 2 tsp.
fresh thyme, chopped
Pinch chilli flakes
Salt
Freshly ground black pepper
Zest of 1 lemon
Lemon wedges, for serving
Directions
- Step 1Preheat the oven to 190°C (170ºC fan). Combine courgette, oil, garlic, thyme, and chilli flakes on a large sheet tray. Season with salt and pepper and use your hands to toss courgette until they are coated in oil and spices.
- Step 2Roast until courgette is tender and slightly golden, 13-15 minutes.
- Step 3When courgette is tender, toss with lemon zest and serve with lemon wedges on the side.
