Use up your overgrown courgettes with this deep-fried alternative to chips

300g Italian 00 Flour
4tbsp olive oil
250ml warm water
12 small courgettes
1 egg white
2 litres sunflower oil
Flaked sea salt
Method
Step 1
Mix the flour, oil and water to make a batter. Set aside for 20 minutes.
Step 2
Cut the courgettes into thin batons.
Step 3
Whisk the egg white to form peaks and fold into the batter.
Step 4
Heat the oil in a deep pan and test a drop of batter - it should sizzle and turn brown in a few seconds.
Step 5
Dip the batons in batter and drop into the oil, in batches. Fry for a minute, then scoop out and do the next batch.
Step 6
Sprinkle liberally with salt and serve.
